Eggs-tra eggs in abundance

We overbought eggs for Easter weekend and could not possibly use them all for coloring. Three-dozen have a use-by date of May 15, and we have been, eh, scrambling to use them on all week.

Apart from the obvious we have tried to use them for baking (as healthfully as possible, Sitekick), we have eaten egg-salad and tuna salad sandwiches made with low fat mayo and hard-boiled egg whites as snacks.

When I read research that having eggs at breakfast can aid weight loss by helping people eat less all day, I was all for them, but this is getting a bit extreme!
